POSITION : Western Kitchen Chef

Reporting to the Executive Chef and Director of F&B. Tooffer all assistance possible to guests, efficient and flexible service consistent withSwissotel Foshan Standards Policies & Procedures in order to maximize guestsatisfaction.


The main responsibilitiesand tasks of this position are as listed below, but not limited to these :

Based upon menu item sales figures, review the profitability andpopularity of dishes upon the menu and make changes where applicable (thisfunction is be carried out in conjunction with the General Manager)

Participate in the drafting of concept ideas and menus for allspecial events and functions while encouraging all staff to put forward theirideas and utilizing them wherever practical

Supervise the kitchen in the preparation and presentation of allfood items in accordance with the hotel’s food and beverage standards andstandardized menu guidelines

  • Monitor standards of production to ensure quality
  • Supervise all aspects of kitchen cleanliness and co-ordinate theeffective utilization of all kitchen attendant within the effective manninglevels, ensuring that all kitchen areas are maintained in a hygienic conditionat all times and ensuring adherence to hotel standards HACCP

    Control of food purchasing levels in liaison with the Storesperson


    The main responsibilities and tasks of this positionare as listed below, but not limited to these :

  • Assistin the management of Chinese Kitchen Operation including menu planning andcosting, organizing special events, developing new dishes, maintaining foodquality standards and comprehensive product knowledge.
  • Develop and write standard recipes
  • Assist with organizing special events and special foodpromotions
  • Maintain comprehensive product knowledge including ingredients,equipment, suppliers, markets, and current trends and make recommendations forappropriate adjustments to kitchen operations accordingly
  • We are looking for acandidate with right attitude, who is a team player and can work well underpressure. In addition, he / she should possess :

  • Previous serviceexperience is preferred
  • Good verbal & writtenis a plus
  • Excellent communicationand organizational skills
  • Highly responsible &reliable
  • Not opened forexpats, Chinese ID only
